About the Recipe

Ingredients

  • 9farm fresh eggs from free ranged chicken

  • 1/3 cup milk of choice, unsweetened

  • 2 garlic cloves, minced

  • 1 lemon, zest from organic, unsprayed lemons

  • 1/2 medium red onion, sliced

  • 4 oz. soft goat cheese, reserve some for topping

  • 10. oz heirloom cherry tomatoes, halved

  • 1/4 cup fresh basil, torn

  • 3 tablespoons fresh dill, roughly chopped

  • Sea salt to taste

  • Freshly ground pepper

  • 2 tablespoons Organic Extra Virgin Olive Oil

Preparation

  1. Preheat oven to 425 degrees.


  2. In a large bowl, whisk together eggs, milk, lemon zestand garlic. Stirr in red onion, cherry tomatoes, goatcheese, dill and basil. Season with sea salt andfreshly ground pepper to taste.


  3. Using a 10-12 inch pyrex or cast iron skillet, greasethe pan with olive oil. Pour the mixture into the panand top with dollops of goat cheese.


  4. Bake for 20-25 minutes or until puffy and cooked allthe way through.


  5. Let cool for 5-10 minutes before serving.
