Ingredients
9farm fresh eggs from free ranged chicken
1/3 cup milk of choice, unsweetened
2 garlic cloves, minced
1 lemon, zest from organic, unsprayed lemons
1/2 medium red onion, sliced
4 oz. soft goat cheese, reserve some for topping
10. oz heirloom cherry tomatoes, halved
1/4 cup fresh basil, torn
3 tablespoons fresh dill, roughly chopped
Sea salt to taste
Freshly ground pepper
2 tablespoons Organic Extra Virgin Olive Oil
Preparation
Preheat oven to 425 degrees.
In a large bowl, whisk together eggs, milk, lemon zestand garlic. Stirr in red onion, cherry tomatoes, goatcheese, dill and basil. Season with sea salt andfreshly ground pepper to taste.
Using a 10-12 inch pyrex or cast iron skillet, greasethe pan with olive oil. Pour the mixture into the panand top with dollops of goat cheese.
Bake for 20-25 minutes or until puffy and cooked allthe way through.
Let cool for 5-10 minutes before serving.
